Matt Kriese park supervisor and naturalist who led some of the tours explained how a Native American couple might have accidentally discovered the process of tapping a tree for its surgary sap and boiling off the excess water to produce syrup. The early process of tapping the tree with a V-shaped cut into the bark evolved into the current method of drilling and tapping with a metal or plastic “spile” through which the sap runs into plastic buckets or bags Kriese said. Syrup season in Wisconsin typically runs from mid-February to mid-April because it needs sub-freezing nighttimes and highs in the 40s or better to make the sap run Kriese said. Kids got a chance to taste the light sugary sap that was tapped from one of 85 red maples on the Barkhausen grounds. They also took turns cranking the handle of the brace and bit that Kriese used to tap a tree.
